Georgia Brown's Red Rice
1 T Garlic, minced
1 each Yellow Onion, diced
1/2 each Green Bell Pepper, diced
1/2 each Red Bell Pepper, diced
2 T Olive Oil
1 lb. Long Grain Rice
2 T Tomato Paste
1 each Beef Steak Tomato, diced
1 tsp. Kosher Salt
1/2 tsp. White Pepper
3 C Chicken Broth
Saute garlic, onion and peppers in olive oil in large skillet. Add rice and stir to coat in oil.
Add remaining ingredients and bring to a boil. Cover, turn off heat and let sit for 25 minutes.
