Red Eyed Gravy
Yield 1.25 quarts
2 T Butter, unsalted
1/2 lb. Bacon, diced
1/2 lb. Ham, smoked & diced
1 C Coffee, fresh brewed
1 quart Beef Broth
Cornstarch, mixed with water (to thicken)
Cracked Black Pepper (to taste)
Place butter and bacon in saucepan and render. Add ham and heat through until crisp.
Add coffee and reduce by 75%. Add beef broth and bring to boil. Thicken with dissolved
cornstarch. Season to taste with cracked black pepper.
