Yield: serves 4
- 4 6-8 oz. Catfish Fillets
- 2 T. Brown mustard
- 1 T. "Jerk" seasoning
- 1 cup Buttermilk
- 1/2 cup flour
- 1/2 cup cornmeal
- Oil for frying (preferably peanut oil)
- Cilantro, chopped (forg garnish)
Combine mustard, jerk seasoning and buttermilk. Marinate catfish fillets in mixture for 8 hours.
Mix flour and cornmeal together. Heat oil in cast iron skillet. Dredge fillets in mixture and place in cast iron skillet for five minutes per side.
Drain on paper towels, dust with salt & pepper to taste.
